First, the site -- Authored by food photographer, cookbook author, and vegetarian Heidi Swanson, 101 Cookbooks is definitely a site you should know about if you enjoy cooking. Even if you aren't particularly interested in whatever recipe she's posting this week, it's bound to give you some idea about something similar that just might tickle your fancy. She's inventive, that's for sure.
Second, the recipe: -- Heidi is so inventive, in fact, that when we thought we'd dreamed up the idea of a chipotle sweet potato pot pie, it turns out that she had already beat us to the punch by several years. But at least she did a great job of it.
An easy substitution for the puff pastry topping is Panko crumbs (usually in the Asian section at the grocery store). We've also tried biscuit dough, and it turns out nicely.
The chipotles in adobo sauce have long been essential part of our cooking. Find the can in the Mexican section and blend it once home. The sauce keeps forever and is great to add to soups, salsas, sauces, whatever needs a little smoky flavor... just be careful not to add more than your taste buds can handle!
Florida is fabulous -- we are ecstatic to finally be in a more permanent stage of life. Q has officially begun work as a professor, and we are feeling settled into our new home. The updates aren't frequent, but we're glad you stopped by to catch up.
